Ingredients

 

 

3 1/2 cups all-purpose flour

 

1 tablespoon baking powder

 

1 teaspoon salt

 

1 cup sugar

 

3 eggs

 

1 stick butter or margarine, melted and cooled

 

Approximately 1 cup whole milk

 

1 cup fresh or thawed and drained frozen blueberries (about 8 per pancake)

 

Vegetable oil or butter, for cooking

 

Serving suggestion: maple syrup and additional butter

Blueberry Pancakes


In a large bowl, stir together the flour, sugar, baking powder, and salt. In a medium-sized bowl, beat the eggs gently, then whisk them into the flour mixture. Mix the butter and one cup of milk together in a medium-sized basin, then gradually stir into the batter.

 

The batter has to have a little bit more thickness than heavy cream. Add a little extra milk if the batter is too thick.

 

Over medium heat, preheat a big heavy-bottomed skillet or griddle that has been seasoned. To keep the pancakes from sticking, lightly oil the pan if it's not well-seasoned. To construct a pancake, spoon or ladle approximately 3 tablespoons of batter onto the griddle.

 

Repeat, making only as many pancakes as you can put on the griddle, leaving about an inch between each one. Add seven or eight blueberries to per pancake. Cook for about 3 minutes more, or until bubbles start to appear on the pancake surfaces. Then, flip the pancakes over and cook the other side until it becomes brown. The pancakes can be kept warm in a low oven (200 degrees Fahrenheit) until all of the batter is cooked. They are best served warm, topped with more butter and maple syrup.
