Fruit Cake - Strawberry Biscuit Cake

Ingredients

 

 

One 16.3-ounce tube refrigerated flaky biscuit dough

 

2 tablespoons demerara sugar

 

1 cup strawberry jelly

 

6 cups quartered strawberries (from about 2 quart containers)

 

1 cup heavy cream

 

1/2 cup sour cream

 

3 tablespoons granulated sugar

 

1/2 cup candied pecans, for garnish

 

 Fruit Cake - Directions

Set the oven's temperature to 350°F.

 

After separating the biscuits, place them evenly in a 9-inch round cake pan. Dust the tops of the biscuits with the demerara sugar. Bake for about 15 minutes or until golden brown. Leave in the pan to cool completely.

 

Fill a large microwave-safe bowl with the jelly. Melt in the microwave for about a minute. Toss in the strawberries to ensure they are uniformly covered in jelly.

 

Transfer the rich cream into a spacious mixing basin. Beat till form gentle peaks. Stir in the granulated sugar and sour cream. Beat to medium-high peaks.

 

Taking care to keep the biscuits together, remove the biscuit cake from the pan and cut it in two horizontally using a serrated knife.

 

Transfer five cups of the glazed strawberries to the bottom side of the biscuit. Place the second biscuit half on top.

 

Place a dollop of whipped cream onto the biscuit and place the remaining cup of glazed strawberries over the centre. Before serving, scatter candied pecans on top.
