Cake with Vanilla In a Mug




Make two smaller or one bigger mug cake.

 

Components:

 

Two one-cup mugs or one two-cup mug

 

Cake:

 

Two tablespoons plus one-fourth cup of organic whole wheat pastry flour

1/8 teaspoon and 1/4 teaspoon baking soda

A quarter-tsp baking powder

1/8 teaspoon sea salt

One-fourth cup of maple sugar

Half a cup of room temperature, full-fat coconut milk (I like the Thai Kitchen brand, it's thick).

1/2 teaspoon of pure vanilla extract

1/2 teaspoon of cider vinegar

1 tablespoon optional sprinkles

Cake with Vanilla In a Mug

Adjust the oven rack to the centre position and preheat to 350 degrees Fahrenheit.

In a large bowl, whisk together flour, baking soda, sea salt, and sugar.

In a small bowl, whisk together coconut milk and vanilla extract; whisk into the flour mixture until well combined.

Stir the batter with the cider vinegar.

Pour the cake mixture into two 1-cup mugs or a larger 2-cup mug.

Put the cake in the oven and bake it for about 25 minutes for the bigger mug and about 15 minutes for the smaller 1 cup, or until a tester put into the centre comes out clean with only a few wet crumbs attached.

Take it out of the oven and allow it to cool, or at least reheat somewhat.

Observations:

You can substitute either coconut sugar or regular granulated sugar for the maple sugar in this recipe.
