Ingredients

 

1/3 cup (2 1/2 ounces) poppy seeds

 

1 tablespoon freshly grated lemon zest

 

1 cup whole, 2 per cent fat, or 1 per cent fat milk

 

2 eggs

 

1 1/2 cups sugar

 

2 cups flour

 

2 1/2 teaspoons baking powder

 

1/2 teaspoon cinnamon

 

1/4 teaspoon nutmeg

 

3/4 cup vegetable oil

 

1 teaspoon pure vanilla extract

 

1 teaspoon almond extract

Whisk together the milk, lemon zest, and poppy seeds in a bowl. Let soak for a minimum of one hour or store in the fridge for the entire night. Set the oven's temperature to 350°F. 


Spread wax paper into a 6-cup loaf pan. Beat the eggs and sugar together with a hand mixer or a mixer with a whisk attachment until the mixture is light and frothy.


Combine the dry ingredients in a different basin. Drizzle the oil, almond extract, and vanilla extract into the egg mixture while the mixer is running. 


While the mixer is still running, gradually add the dry ingredients and the poppy seed milk combination to the egg mixture in separate batches. 


There will be some thin batter. Transfer to the ready pan.


Bake for 1 to 1 1/4 hours, or until the cake is firm and dry on top and the centre is risen and cracked. When baking, try not to open the oven. A cake that is underbaked will fall. 


Allow to cool in the pan for five minutes, then remove and place on a wire rack to cool further before serving.
