Nothing beats a stack of fluffy, golden, totally homemade pancakes, especially when you’ve got an easy step-by-step recipe that lets you mix, flip and serve them up in about 20 minutes. They’re the ultimate breakfast with butter and maple syrup, but these are also great with jam, whipped cream or even chocolate sauce. You can also customize your pancakes with mix-ins like chocolate chips, nuts, blueberries or bananas.


Ingredients

 

1 1/2 cups all-purpose flour

 

3 tablespoons sugar

 

1 tablespoon baking powder

 

1/4 teaspoon salt

 

1/8 teaspoon freshly ground nutmeg

 

2 large eggs, at room temperature

 

1 1/4 cups milk, at room temperature

 

1/2 teaspoon pure vanilla extract

 

3 tablespoons unsalted butter, plus more as needed

 

 

 

Directions

1. In a large bowl, mix together flour, sugar, nutmeg, baking powder, and salt.

 

2. In a separate dish, beat the eggs; add the milk and vanilla and stir.

 

3. Melt the butter in a large cast-iron skillet or griddle over medium heat.

 

4. Add the butter to the mixture of milk. Once a dense dough forms, incorporate the wet ingredients into the flour mixture and stir thoroughly.

 

 

5. Spoon about 1/4 cup of the batter onto the skillet over medium heat to make a pancake. Make sure to cook one additional pancake or two, spacing them evenly apart.

 Cook for about two minutes, or until bubbles appear on the pancakes' surface and their undersides turn golden brown.

 

Using a spatula, turn, and cook the other side for an additional minute or so.

 

 Serve right away or move to a dish, covering loosely with foil to maintain warmth.

 

 

 Continue with the remaining batter, adjusting the skillet's butter as necessary.

 

6. How to add fruit to pancakes: After the bubbles pop, sprinkle the pancake's surface with chopped or sliced fruit, chocolate chips, almonds, etc.

 

Using a spatula, turn, and cook for an additional minute, watching out not to burn the toppings.
