Sicilian Love Cake

Ingredients

1 box chocolate cake mix, plus the ingredients called for in the directions

Canola oil, for preparing the pan

Mascarpone-Ricotta Filling:

28 ounces ricotta cheese (3 1/2 cups)

4 ounces mascarpone (1/2 cup)

3 large eggs

3/4 cup sugar

1/8 teaspoon kosher salt

Cocoa-Mascarpone Frosting:

10 ounces mascarpone (1 1/4 cups)

1 cup whole milk

One 3.9-ounce box of instant chocolate pudding mix

1 tablespoon sugar

As directed by the cake mix, preheat the oven.

Lightly grease a 9-by-13-inch pan with canola. Following the instructions on the cake mix, prepare the cake batter, pour it into the prepared pan, and set aside.

2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Blend until it is smooth. To ensure that the upper part of the chocolate batter cake pan is completely white, carefully pour the filling over it. Bake for about 40 minutes, or until the skewer inserted in the middle comes out clean and the chocolate coating comes up.

Allow the cake to cool completely.

Just before serving, whisk the mascarpone, milk, chocolate custard mix, and sugar using a stand mixer until smooth. Using an offset spatula, spread the icing evenly over the cake and serve.
