Today let's look at Manchow soup
Materials:
1 tbsp oil
5 large garlic cloves, finely chopped
1-inch piece of ginger peeled and finely chopped
1 to 2 green chillies
1 cup vegetables, finely chopped - bell pepper, carrot, mushroom, white part of spring onion
3 cups vegetable stock
1 tbsp soy sauce
1/2 tsp vinegar
1/2 tbsp tomato ketchup
1/2 tbsp Maggi Chili Masala Sauce
1 tbsp cornstarch or cornflour
2 pinches of white paper powder
Salt to taste
Green part of pati onion for garnish
1/4 cup vermicelli (optional).
Action:
Lettuce:-
Chinese noodles should be boiled in water until about 80 to 90% cooked. Fry half of the cooked green beans in oil till they become crispy.
1) Heat 1 tbsp oil in a kadai. Fry finely chopped ginger and garlic in it for 4 to 5 seconds. Add chillies and saute. Add chopped vegetables to it and cook it half raw. Add salt.
2) Add 3 cups of vegetable stock when the vegetables are partially cooked. When it comes to a boil, add 1 tbsp light soy sauce, tomato ketchup and Maggi chilli masala sauce. Taste. Add salt if required. Add white paper powder.
3) Mix 1 tbsp cornstarch in 1/4 cup water and add it to the soup. Boil for 2-4 minutes and add vinegar.
If you are going to use vermicelli, add only cooked vermicelli. While serving, first pour the soup into the bowl, and add the finely chopped green part of the onion and fried vermicelli.
Note:
1) Plain water can also be used if vegetable stock is not available.
