Ingredients:

 

Online cake delivery -Brownie Crust and chunks:

 

1 cup brown sugar

1/4 cup melted coconut oil

2 Tbsp ground flax seeds

1/4 cup filtered water

1 tsp pure vanilla extract

1/2 cup cocoa powder

1/2 cup flour

1/4 tsp sea salt

1 tsp baking powder

2 cups soft, pitted Medjool dates (if they are not soft, soak them in water for 30 minutes and drain before using)

1/3 cup raw cashew butter or almond butter

2 Tbsp maple syrup

1/4 tsp sea salt

1 tsp pure vanilla extract

1/2 cup filtered water

For assembly:

 

2 1/2 cups vanilla ice cream, softened (I used store-bought this time)

1/2 cup chopped dark chocolate chunks

Instructions:

Preheat the oven to 350 degrees Fahrenheit. Line two cake pans, one 6-inch round and one spring-form, with parchment paper.

Blend the sugar and coconut oil in a bowl.  Next, combine the flax seeds and water in a smaller bowl. Add this combination to the sugar mixture, along with the vanilla essence, and whisk until it's smooth.

Blend in the baking powder, flour, sea salt, and cocoa powder until smooth.

 

Fill the two 6-inch pans that have been prepped, then transfer to the oven.  Bake until the brownies are firm and beginning to come away from the sides, about 25 minutes.

 

Take it out of the oven and allow it to cool.

 

Cut the brownie into 1/2-inch cubes using a conventional 6-inch cake pan, then set it aside.

 

In the meantime, puree dates, cashew butter, maple syrup, sea salt, vanilla, and water in a high-speed blender until smooth to form the caramel. Put aside.

 

 

When it's time to put everything together, cover the brownie base in the springform pan with half of the ice cream, smoothing it to the edges.  Using a knife, swirl some caramel over it by the tablespoon.

 

Top that with half of the chocolate chunks and a few brownie pieces.

 

Over that, spread the remaining ice cream, and then repeat with the brownie bits, chocolate chunks, and caramel (you might have extra for serving).

 

Put in the freezer and let for at least 4 hours, or until the mixture is solid enough to cut.
