Sweet Potato Casserole

   Sweet Potato Casserole   Serves 8-10   Sweet Potatoes:   4 large sweet potatoes or yams 3 Tbsp maple syrup 1/4 cup full-fat coconut milk 1/2 tsp Ground Cinnamon 1/8 tsp Ground Nutmeg 1/8 tsp  Sea Salt     Topping:   3/4 cup coarsely chopped pecans 2 Tbsp maple syrup 3 Tbsp maple sugar or coconut sugar 1/4 tsp  Ground Cinnamon     Instructions:   Preheat the oven to 425F degrees. Prick sweet potatoes with a fork all over, and place in the oven on a baking sheet. Roast until tender, about 1 hour. Remove from the oven and cool until cool enough to handle. Remove the skins, place in a bowl, and add the maple syrup, coconut milk, McCormick Sea Salt, and  Ground Cinnamon and Nutmeg. Mash together with a potato masher or a large fork, and then place in an oiled 8 or 9-inch square baking dish (or two smaller casserole dishes).
