    Blueberry Yogurt Muffins (makes 12 regular-size muffins, preparation time 15 mins, baking time 15 mins) Ingredients • 240g plain yoghurt (I use Farmers Union Greek-style yoghurt) • 1 large egg • 60g Grapeseed oil (original canola or corn oil) • 1/2 tsp pure vanilla extract • 260g plain flour • 75g caster sugar (original 100g) • 1 tsp baking powder • 1/2 tsp baking soda • 1/4 tsp salt • 125g blueberries (original 100g, I used up all the blueberries in a punnet) Steps 1. Preheat oven to 190 degrees Celsius. Position the rack in the centre of the oven. Line the muffin pan with paper cases. 2. Sift flour, baking powder, baking soda and salt into a mixing bowl. Add sugar and mix well. Set aside. 3. Remove 1 tbsp of the dry ingredients and toss well with the blueberries. Set aside. 4. In a separate bowl, whisk together the yoghurt, egg, oil and vanilla extract until blended. 5.     Cakeblogin's - Apple Streusel Muffins   Makes 16   Ingredients:   1 cup coconut sugar 3/4 cup almond butter 1 cup organic apple sauce 1 ½ Tbsp ground flax seed mixed with 4 ½ Tbsp filtered water 1 1/4 cups organic whole wheat pastry flour 2 tsp ground cinnamon 1 tsp ground ginger 1/4 tsp nutmeg ½ tsp sea salt ½ tsp baking soda 1/8 tsp baking powder     Streusel:   1/4 cup plus 2 Tbsp organic rolled oats 3 Tbsp organic whole wheat pastry flour 1/4 cup coconut sugar pinch sea salt 1/4 cup almond butter     Instructions: Set out 16 muffin pans and preheat the oven to 350 degrees. In a large bowl, whisk together the flax mixture, apple, almond butter, and coconut sugar. Blend until smooth after adding the flour, spices, baking powder, baking soda, and sea salt.    Makes 12 Dark Chocolate Hazelnut Banana Muffins.   Components:   one cup of sugar made from coconuts Hazelnut butter or chocolate hazelnut spread, 3/4 cup Rawmio One cup of ripe, organic bananas, mashed Four tablespoons of filtered water and one tablespoon of ground flax seed 1 ¼ cups whole wheat pastry flour that is organic and ¼ cup cacao powder One-half teaspoon sea salt One-half teaspoon baking soda 1/8 teaspoon powdered sugar ¾ cup chopped vegan dark chocolate pieces or Rawmio Essentials dark chocolate chips Guidelines:   Set aside 12 muffin tins to bake at 350 degrees Fahrenheit and line them with liners.
