There seems to be a lot of ice cream around the house lately, which means I should be making more ice cream cake! This time, I spotted one with strawberry and vanilla flavours, and my imagination was already buzzing with possible pairings and creations for the Anniversary cake.


I instantly decided that I wanted to prepare a vanilla and strawberry cake and match the hues of the Anniversary cake - ice cream.



Anniversary Cake -Things I Made Use of Cake:

Margarine 200g of flour,

175g of sugar,

175g of eggs,

and baking powder

1 tsp vanilla extract

1 tsp of pure strawberries

1 teaspoon of strawberry

A single teaspoon of red food colouring

I creamed sugar and margarine until the mixture was nice and fluffy, which took about 10 minutes.

then gradually add each egg one at a time.

Add the flour and baking powder and sift to combine.

Next, I separated the mixture into two portions,

combining the food colouring and vanilla essence in one half and the strawberry essence in the other.

I evened out the dough, transferred it to a buttered and dusted baking tin,

and baked it at 180 degrees Celsius for around 45 minutes,

alternating between the vanilla and strawberry tastes.



The Filling:


I let the Anniversary cake cool for about 30 minutes before freezing it to make it easier to deal with while filling.

I then divided the cake in half by slicing across it.

After levelling and scooping ice cream onto one half of the cake,

I put the top half which was the bottom half

in the freezer to prevent the ice cream from melting.

I added some sugar to the whipping cream after whipping it up.

I removed the cake and covered it with whipped cream,

Make sure to pipe extra icing on top of the strawberries



Anniversary cake - The Final Bite:


At this point, to prevent the ice cream from melting,

either work quickly or keep the cake in the freezer on occasion.

I used the green portions of the strawberries as a cake garnish.

placed three scoops in the centre and some halved strawberries on top.

Finally, I shaved some chocolate all over the cake and added some larger chocolate chunks to the three scoops.


I covered it with some melted ice cream.

Then put it back in the freezer.

And voilà.

A vanilla and strawberry scented cake topped with chocolate shavings, vanilla and strawberry ice cream covered with whipped cream, and ice cream scoops.

I can just picture you asking a waitress in a café to fulfil that same order and seeing what kind of response you receive.
