1 1/2 cups all-purpose flour

3/4 cup plus 2 Tbsp granulated sugar

3/4 tsp baking powder (1/2 tsp plus 1/4 tsp)

1/2 tsp sea salt

2 flax eggs (2 Tbsp golden ground flax seed mixed with 1/4 cup plus 2 Tbsp filtered water, allowed to sit 15 minutes)

1/4 cup plus 2 Tbsp avocado oil or other neutral oil

1/2 cup plant-based milk

1 1/2 tsp pure vanilla extract

Caramel:

 

3/4 cup brown sugar

1 cup coconut cream

1/4 tsp sea salt

1 tsp pure vanilla extract

3/4 cup finely shredded dried unsweetened coconut

3/4 cup dark chocolate, chopped

Instructions:


Before starting, grease a doughnut pan and heat the oven to 350°F.

In a large bowl, combine the flour, sugar, baking powder, and sea salt; whisk to combine.

Add the avocado oil, oat milk, vanilla, and flax eggs. Beat with an electric mixer for about one minute (three minutes if whisking by hand).

 

Fill the holes in the doughnut pan 3/4 full with batter when it has been prepared.

When the doughnuts are done in the middle that is, when a toothpick inserted into the center comes out almost clean with a few wet crumbs place them in the oven and bake for 15 to 20 minutes.

 

After taking them out of the oven and allowing them to cool for twenty minutes, tap the counter to loosen the doughnuts from their pans. To make the doughnuts simpler to deal with (the caramel will set faster), place them in the freezer and keep them there until they are frozen for about 1 hour.

 

In a saucepan, combine all the ingredients for the caramel sauce and bring it to a boil.  Reduce heat to a simmer and continue cooking until it begins to thicken, about 15 minutes.  Take off the heat and give it a good fifteen minutes to cool.  Add the coconut and stir.

 

After coating each doughnut on one side with caramel, set it on a wire rack.  Continue until you have dunked every doughnut.  Refrigerate them on the rack for approximately fifteen minutes, or until the caramel hardens.

 

The dark chocolate should be melted in the top of a double boiler until it is smooth. Then, transfer the chocolate to a pastry bag and pipe or drizzle it over the doughnuts (using a spoon will result in a less organized appearance).  Put the doughnuts on a cooling rack and refrigerate for approximately ten minutes or until the chocolate sets.

Have fun!  Any leftover doughnuts can be kept for up to a week in the refrigerator in a jar.
