Ingredients

 

Cake:

 

2 sticks (1 cup) unsalted butter, at room temperature, plus more for greasing the pan

 

2 1/2 cups all-purpose flour

 

1/2 teaspoon baking powder

 

1/2 teaspoon baking soda

 

1/2 teaspoon fine salt

 

1 1/4 cups buttermilk, well shaken

 

2 teaspoons pure vanilla extract

 

2 cups sugar

 

3 large eggs, at room temperature, lightly beaten

 

One 3-ounce box of strawberry gelatin

Sweetened berries:

 

2 pounds strawberries

 

3 tablespoons sugar

Topping:

 

2 cups heavy cream, cold

 

1 tablespoon sugar

 

2 teaspoons pure vanilla extract

Fruit Cake - Strawberry Poke Cake - About the cake: 


Set an oven rack in the bottom third of the oven and preheat it to 350 degrees Fahrenheit. Grease a 9 by 13-inch pan from the bottom to the sides.

 

Mix the flour, baking powder, baking soda, and salt in a bigger bowl and set it aside.

 

 In a measuring cup with a spout, whisk together the buttermilk and vanilla; leave aside.

Using a stand mixer or a large bowl if using a hand mixer, beat the butter and sugar on medium speed for approximately 5 minutes, scraping down the side of the bowl as needed, until the mixture is very light in colour and fluffy. Add the eggs gradually and beat until well combined.

 

Lower the speed to the minimum and, while the mixer is operating, alternately whip in three additions of the flour combination and two additions of the buttermilk mixture, beginning and finishing with the flour mixture. After scraping down the bowl's side, beat the batter until thoroughly combined. Transfer to the ready pan.

Bake, rotating the pan halfway through until the cake is golden brown and a toothpick inserted in the centre comes out clean, about 30 minutes. Allow the pan to cool for half an hour. Make holes on the top and all the way through the cake with a fork.

 

Place the gelatin in a small bowl, cover it with 1 cup boiling water, and whisk until the gelatin has completely dissolved about 2 minutes.

 

Mix in half a cup of cold water. Evenly pour the mixture over the cake that has cooled. Put in the fridge for two hours. Store a big bowl in the fridge so that you can whip the cream.

 

Regarding the berry sweetened: 

Hull and quarter the strawberries while the cake cools. In a medium basin, toss with the granulated sugar and set aside until soft and juicy, about 1 hour.


Regarding the Fruit Cake garnish: 

Take the cake out of the fridge. In the cold basin, beat the cream until frothy with the sugar and vanilla. After covering the Fruit cake with it, cut it into slices, and serve it with the strawberries.
