Cinnamon Sugar Apple Doughnuts

 

Makes 10 doughnuts

 

Ingredients:

 

Cake:

 

1 1/2 cups whole wheat pastry flour or all-purpose flour

3/4 cup plus 2 Tbsp granulated sugar or maple sugar

3/4 tsp baking powder (1/2 tsp plus 1/4 tsp)

1/2 tsp cinnamon

1/2 tsp sea salt

2 flax eggs (2 Tbsp ground flax seed mixed with 1/4 cup plus 2 Tbsp filtered water, allowed to sit 15 minutes)

3 Tbsp apple sauce

3 Tbsp avocado oil

1/2 cup apple cider

1 1/2 tsp pure vanilla extract

3/4 cup granulated sugar or maple sugar mixed with 1 tsp cinnamon

Instructions:

Before starting, grease a doughnut pan and heat the oven to 350°F.

 

In a large bowl, combine the flour, sugar, baking powder, and sea salt; whisk to combine.

 

Add the flax eggs, oil, apple cider, vanilla, and apple sauce. Beat with an electric mixer for about a minute (or a little longer if beating by hand).

 

Pour the batter 3/4 of the way into the holes in the doughnut pan that has been prepared.

 

Bake the doughnuts for 15 to 20 minutes, or until a toothpick inserted in the centre comes out almost clean with a few moist crumbs, or until the doughnuts are done in the middle.

 

Remove from the oven, let cool for five minutes or more, and then carefully remove the doughnuts from the pans while still warm. Use a tiny bit of avocado oil (I have an olive oil spray) on them.

 

In a bowl, mix together the sugar and cinnamon. Roll each doughnut in the mixture, then spread the additional mixture over the doughnuts until they are well covered.

 

 

Enjoy yourselves!

 

The doughnuts keep well for a week or two on the counter or for up to a week in an airtight container kept in the refrigerator. You can freeze them for up to a few months.
