Let's see garlic today


Materials:

2 1/2 cups gram flour

1/2 cup oil

1/4 cup garlic paste

1/2 glass of water

2 teaspoons of green chilli paste

1 teaspoon of oats

1/2 teaspoon white pepper

salt

Oil for frying


Action:


1) Mix gram flour, white pepper and salt in a pan and sieve it.

2) Heat 1/2 cup of oil on high heat. And add it to the besan mixture. Mix with a spoon.

3) Heat the tawa and close it once it gets hot. Fry eggs in it very lightly. Grind it coarsely in a bowl.

4) Take 1/2 glass of hot water. Add garlic paste, chilli paste and ovapud to it and mix. Garlic should be crushed by hand so that the taste of garlic will come out in the water. Filter this water through a fine mesh filter.

5) Slowly add this water to besan and make a thick but sticky mixture.

6) Oil should be applied inside the skin to be shaved. Add soaked gram flour to it.

7) Heat oil in a pan. Once the oil is hot, keep the gas on medium flame. Press and shave. The correct method of shaving is circular shaving. This means that the oil has made a round by rotating outwards so that it immediately completes the cycle inwards. The larger the pan, the more rounds should be made. If possible, the shavings should not be cut on one, remain raw and fall soft.

8) Once one side is fried, flip it lightly and fry the other side. In this way, all the soaked flour should be made into shavings.

9) Keep the fried chicken on tissue paper. That means more oil will go away. When it cools down, crush it by hand and store it in an airtight container.


Notes:


1) Using 2 tsp of red chillies instead of chilli paste also works. But if the colour of the chilli is too bright, the colour of the chai becomes reddish.

2) Do not add garlic, ova, or chillies directly to besan. Ova, garlic particles get stuck in the shaving net and the shaving does not come off properly. So put everything in the water to give its flavour to the water and use this water to soak the flour.

3) The amount of water can be more or less by a few tbsp. So add water sparingly. The mixture should become thick and sticky.
